Oatmeal and Raisin Cookies

Ingredients
  

  • 170 g butter room temperature
  • 150 g white sugar
  • 150 g brown sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 170 g plain flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 20 g rolled oats
  • 150 g raisins

Instructions
 

  • Cream together the butter, sugars and vanilla in a large bowl until smooth.
  • Add the eggs one at a time, combining completely before adding the next.
  • Carefully add the flour and baking soda and salt to into the butter mixture and mix well.
  • Stir in the oats, then fold in the raisins until all combined.
  • Using your hands, roll the cookie mixture into multiple balls, each about the size of a golf ball, and then flatten. (The thicker the cookie, the chewier it will be)
  • Line the air fryer basket with baking paper leaving a 1.5 cm border free of paper to allow air to circulate, and place the cookies inside (you may need to work in batches)
  • Select Air Fry and set the temperature to 160°C and the time to 6 minutes and press start. Ignore when prompted to add food as the biscuits will already be inside, and ignore when prompted to Turn food.
  • When the cooking program has finished, let the biscuits cool slightly in the air fryer for a few minutes, before transferring to a cooling rack to cool completely.
