
Tasty Pulled Pork

Ingredients
- 1.3 kg pork shoulder
- 125 ml bbq sauce
- 250 ml ginger beer
- 1 large onion chopped into small wedges
Rub
- 2 tsp smoked paprika
- 2 tsp salt
- ½ tsp ground black pepper
- 1 tsp dried parsley
Instructions
- Remove the extra layer of fat from the outside of the pork (as long as it comes away easily)
- Combine the rub ingredients and rub all over pork.
- Place the pork on the trivet inside the Inner Pot and pour over the bbq sauce and ginger beer, and toss the onions pieces on top.
- Select High Pressure and programme for 70minutes. Followed by natural pressure release.
- Remove the pork and shred with two forks.
- With the sauce still in the pot, select the Saute function and reduce the sauce to about 125ml.
- Add the pork back to the pot and keep warm.
