  • Vortex Air Fryer


  • 1 medium courgette trimmed
  • 2 tsp kosher salt
  • 1 egg beaten
  • 1 tbsp Water
  • 128 g panko breadcrumbs
  • 100 g Parmesan cheese finely grated
  • 1 tsp smoked paprika
  • Dipping sauce of choice


  • Slice the courgette into 1/8 inch rounds, sprinkle with salt and let stand at room temperature for 10 minutes.
  • Set up for dredging: Combine beaten egg and 1 tbsp water in a shallow dish. Combine breadcrumbs, parmesan cheese and smoked paprika in a second shallow dish.
  • Gently blot dry courgette with a towel to remove excess moisture.
  • Working a few at a time, dredge zucchini slices first in the egg mixture, then place in the breadcrumb mixture and press the crumbs firmly on both sides.
  • Select Air Fry, and set the temperature to 190°C and the time to 12 minutes, then touch Start to preheat the Vortex.
  • When the display indicates “Add Food” carefully place the courgette chips into the frying chamber (leave a little space around each one)
  • Turn the chips when prompted.
  • When the Air Fry program is complete, remove the courgette chips and serve hot with your choice of dipping sauce.
