Cream together the butter, sugars and vanilla in a large bowl until smooth.
Add the eggs one at a time, combining completely before adding the next.
Carefully add the flour and baking soda and salt to into the butter mixture and mix well.
Stir in the oats, then fold in the raisins until all combined.
Using your hands, roll the cookie mixture into multiple balls, each about the size of a golf ball, and then flatten. (The thicker the cookie, the chewier it will be)
Line the air fryer basket with baking paper leaving a 1.5 cm border free of paper to allow air to circulate, and place the cookies inside (you may need to work in batches)
Select Air Fry and set the temperature to 160°C and the time to 6 minutes and press start. Ignore when prompted to add food as the biscuits will already be inside, and ignore when prompted to Turn food.
When the cooking program has finished, let the biscuits cool slightly in the air fryer for a few minutes, before transferring to a cooling rack to cool completely.
