In a large bowl, combine the flour, ginger, baking soda, cinnamon and salt.
In a second bowl, beat the butter with the sugar, egg and maple syrup until creamy.
Add the dry ingredients to the wet and blend to combine. Once everything is mixed, shape into small balls using your hands.
Put the sugar for coating in a separately bowl then carefully dust the biscuit balls in the sugar.
Slightly flatten each ball (the thicker it is, the chewier the biscuits!)
Select Air Fry on your Vortex Air Fryer and set the time to 8minutes and temperature to 152°C and press start.
When prompted to add food, place 4-6 biscuits into the air fryer basket (leaving space around each one.) Ignore when prompted to turn food.
Cook until hard on the outside but soft to touch when you press the biscuit.
Repeat steps 6-8 for the remaining biscuits.
Allow to cool down before eating and enjoy!
